2. It has been noted that the making of MILPA is the central, most sacred act, one which binds together the family, the community, and the universe.
Milpa Collective is a boutique hospitality group based in Sydney. Established in 2017, Milpa Collective had a vision to bring authentic and contemporary Mexican and Latin American cuisines to Australia. To date, Milpa Collective have successfully established four iconic venues around the Eastern Suburbs of Sydney, including Bondi and Potts Point, offering their guests unique dining experiences.

Milpa Collective endeavours to transport you through a sensorial journey. Whether this be through authentic Mexican cooking techniques such as charcoal wooden fire and parrilla, 1950’s Havana style cocktails, or fun taco parties, Milpa will carry you through time and place, offering you our expertise and insights into our favourite cooking methods, Mezcal selections and party favourites along the way.
Our Venues
Caribbean Cocktail Bar inspired by 1920s and 1930s-era Havana. Elaborate cocktails, flavour punching Cuban style food plates.
Sonora is a high-end mexican restaurant and mezcal bar, inspired by the cuisine of Sonora, a coastal state in Mexico’s north-west.
Directly translated to ‘taco party’, Taqiza is inspired in Tulum taquerias with a refined selection of mezcals of margaritas.
Carbón means ‘charcoal’ in Spanish, focuses on wood fired dishes using traditional South American ‘parrilla’ techniques.

Taco Tuesdays

Every Tuesday, enjoy $5 Tacos at La Palma, Carbon, Taqiza and Sonora.

We also have a well-stocked bar with boutique tequila. You will feel like you’re sitting under a cabana in the Caribbean, sipping on margaritas and chowing down on some amazing tacos, except you’ll never leave Sydney. For all the tequila lovers, we have $12 margaritas, classic, or spicy jalapeño.  If you feel like a change after a few margys, why not trying $5 Tecate, an all-time favourite Mexican Beer.

Bottomless Brunch
At Carbon and Sonora, we are serving all-you-can-eat tacos with bottomless Margaritas on Saturdays and Sundays 12 to 5 pm. It’s $79 per person, but the food is a step up from your average Sydney Mexican fare, plus Margaritas made with top-shelf Mexican tequilas.

From 12pm to 5pm. Sittings are one hour and a half, are the clock starts at the time of your booking!

Similarly, at La Palma we are  serving all-you-can-eat tacos with bottomless Classic Margaritas, Tecate and Rose… the good part? you can book it for any day of the week!
