1. A “Milpa” is a millenarian mesoamerican tradition in which farmers plant different crops together. The milpa crops are nutritionally and environmentally complementary.

2. It has been noted that the making of MILPA is the central, most sacred act, one which binds together the family, the community, and the universe.
Milpa Collective is a boutique hospitality group based in Sydney. Established in 2017, Milpa Collective had a vision to bring authentic and contemporary Mexican and Latin American cuisines to Australia. To date, Milpa Collective have successfully established four iconic venues around the Eastern Suburbs of Sydney, including Bondi and Potts Point, offering their guests unique dining experiences.

Milpa Collective endeavours to transport you through a sensorial journey. Whether this be through authentic Mexican cooking techniques such as charcoal wooden fire and parrilla, 1950’s Havana style cocktails, or fun taco parties, Milpa will carry you through time and place, offering you our expertise and insights into our favourite cooking methods, Mezcal selections and party favourites along the way.

Calita is a marisqueria that sits in front of Bondi Beach. Calita works with local suppliers to showcase a rotating selection of fresh, locally and sustainably sourced seafood.
Caribbean Cocktail Bar inspired by 1920s and 1930s-era Havana. Elaborate cocktails, flavour punching Cuban style food plates.
Sonora is a high-end mexican restaurant and mezcal bar, inspired by the cuisine of Sonora, a coastal state in Mexico’s north-west.
Directly translated to ‘taco party’, Taqiza is inspired in Tulum taquerias with a refined selection of mezcals of margaritas.
Carbón means ‘charcoal’ in Spanish, focuses on wood fired dishes using traditional South American ‘parrilla’ techniques.

MILPA Collective is travelling to Mexico City.

Located in Colonia Roma, considered one of the trendiest neighbourhoods in Mexico City, renowned for its’ beautiful architecture, incredible hospitality scene and its’ abundance of cultural activities.

At MUX we want to keep alive the ancestral knowledge of indigenous cooks, their traditions and their products. MUX offers seasonal menus collaborating with indigenous communities across the country, showcasing the best of their culinary traditions, promoting fair trade and the conservation of native crops and ancestral agave.

Coming to Clarence Street August, a mezcal bar with an interesting food offering inspired by the ancestral cuisine of Oaxaca. A place for everyone; for mezcal sommeliers as well as for party goers and casual walk-bys.

Santa Catarina Minas is a municipality at the heart of Oaxaca, south-west Mexico. The seemingly unconnected parts of saints, martyrs, mines and mezcal, are what makes Santa Catarina Minas the hub of Artisanal mezcals. A mystic and magical alcohol running on river waters, dusty roads and lush mountains, distilled in clay pots, over wood-fire and brick ovens at the light of candles. This sets up the perfect environment for our beloved Santa Catarina, coming to Clarence street, August.

Casa Merida

A lavish restaurant and cocktail bar with a home feeling, serving Mayan food from the south peninsula of Yucatan, Mexico, opening its doors to a blend of Colonial Elegance and Mayan ancestry.

Founded by Spanish conquistadors, Merida prospered to be the wealthiest city in the country. Carved Maya stones from ancient cities were used to build Spanish colonial buildings, mixed with European embellishments, paint and ornamentation. Ancestral recipes blended with lush and rich European flavours, mirror the majestic presence of the architecture, to the eye and to the mouth.

The flavours from the kitchen of creamy spices and aged cheeses, blended with the scents of orange blossom, dried red roses and a hint of fresh tobacco leaves; welcoming the most delicate palates as well as indulgent foodies.

Our Casa Merida is drenched in heritage and uses it’s rustic elegance with distinct singularity paying homage to its main inspiration, the city of Merida, Yucatan.

Our casa will be opening our doors to you in August.

Bottomless Brunch

At Carbon, La Palma and Sonora, we are serving all-you-can-eat tacos with bottomless Margaritas on Saturdays and Sundays 12 to 5 pm. It’s $85 per person, but the food is a step up from your average Sydney Mexican fare, plus Margaritas made with top-shelf Mexican tequilas.

From 12pm to 5pm. Sittings are one hour and a half, are the clock starts at the time of your booking!

Every Tuesday, enjoy $6 Tacos at Carbon and Taqiza.

We also have a well-stocked bar with boutique tequila. You will feel like you’re sitting under a cabana in the Caribbean, sipping on margaritas and chowing down on some amazing tacos, except you’ll never leave Sydney. For all the tequila lovers, we have $14 margaritas, classic, or spicy jalapeño.  If you feel like a change after a few margys, why not trying $6 Tecate, an all-time favourite Mexican Beer.
