1. A “Milpa” is a millenarian mesoamerican tradition in which farmers plant different crops together. The milpa crops are nutritionally and environmentally complementary.

2. It has been noted that the making of MILPA is the central, most sacred act, one which binds together the family, the community, and the universe.
Milpa Collective is a boutique hospitality group based in Sydney. Established in 2017, Milpa Collective had a vision to bring authentic and contemporary Mexican and Latin American cuisines to Australia. To date, Milpa Collective have successfully established five iconic venues around the Eastern Suburbs of Sydney, including Bondi and Potts Point, offering their guests unique dining experiences.

Calita is a marisqueria that sits in front of Bondi Beach. Calita works with local suppliers to showcase a rotating selection of fresh, locally and sustainably sourced seafood.

Sonora is a high-end mexican restaurant and mezcal bar, inspired by the cuisine of Sonora, a coastal state in Mexico’s north-west.
Directly translated to ‘taco party’, Taqiza is inspired in Tulum taquerias with a refined selection of mezcals of margaritas.
Carbón means ‘charcoal’ in Spanish, focuses on wood fired dishes using traditional South American ‘parrilla’ techniques.

MILPA Collective is travelling to Mexico City.

Located in Colonia Roma, considered one of the trendiest neighbourhoods in Mexico City, renowned for its’ beautiful architecture, incredible hospitality scene and its’ abundance of cultural activities.

At MUX we want to keep alive the ancestral knowledge of indigenous cooks, their traditions and their products. MUX offers seasonal menus collaborating with indigenous communities across the country, showcasing the best of their culinary traditions, promoting fair trade and the conservation of native crops and ancestral agave.

Hello, from Santa Catarina, a high-end Oaxacan restaurant and ancestral and artisanal mezcal bar, in Sydney’s CBD.

Slink into Santa Catarina for a truly unequalled experience. The cultural syncretism of its namesake is brought to life in this secret den. It’s energetic, opulent, risk-taking. A melting pot of Catholicism and indigenous beliefs, an insight into the complex but incredibly rich history of this city that’s poised among the mountains.

Find impossible-to-come-by-mezcal here, rare even in Mexico. Mezcal runs through Santa Catarina’s blood as it does in her city. The list is extensive, the opportunity to sip endless.

Sidled up next to the mezcal is Oaxacan fare. It’s all about the artisanal. Moles are developed over months, there’s a section dedicated to corn. Brick ovens, candlelight. There are garnachas, tetelas and no tacos. It’s intimate, enigmatic.

Introducing Casa Merida, your new way to savour atypical Mexican cocktails and spirits. It’s a Mexican cocktail bar offering Mayan food from the Yucatán Peninsula and Mexican spirits, out of a Méridan-style house in Potts Point.

Casa Mérida is not your typical Mexican bar and restaurant – it’s steeped in Mayan tradition and its cuisine reflects this. It’s respectful, refined. Locking eyes with fire-cooked pork and very rare Mexican spirits is not an uncommon occurrence at Casa Mérida. Cheeses are aged and melted, spices hit the palate hard, tobacco lingers.

The drink experience is front and centre at Casa Merida. Find highly specialised Mexican spirits, some of which can be found nowhere else in Australia. One bar runs the length of the entire restaurant, the other hides in the backyard, serving only Mexican spirits, exclusive Yucatán drinks.

Casa Mérida’s offering is unlike any other in Potts Point. It’s tropical, yet homely, an oasis among the urban, like its namesake. Enter and feel like you’re at home, in south-west Mexico, in Potts Point.

Taco Tuesdays

Every Tuesday, enjoy $6 Tacos at Carbon and Taqiza.

We also have a well-stocked bar with boutique tequila. You will feel like you’re sitting under a cabana in the Caribbean, sipping on margaritas and chowing down on some amazing tacos, except you’ll never leave Sydney. For all the tequila lovers, we have $14 margaritas, classic, or spicy jalapeño.  If you feel like a change after a few margys, why not trying $6 Tecate, an all-time favourite Mexican Beer.

Bottomless Brunch

At Carbon, La Palma and Sonora, we are serving all-you-can-eat tacos with bottomless Margaritas on Saturdays and Sundays 12 to 5 pm. It’s $85 per person, but the food is a step up from your average Sydney Mexican fare, plus Margaritas made with top-shelf Mexican tequilas.

From 12pm to 5pm. Sittings are one hour and a half, are the clock starts at the time of your booking!
